Occasionally here under the Big Top we celebrate clean out the refrigerator night which basically means it is leftovers for dinner.
Mmm-mmm! Leftovers!
So for dinner tonight the Big Top was featuring leftover pizza, beef and pasta in tomato sauce, fried rice, chicken chow mein, broccoli beef, steamed veggies, tossed salad and fresh pineapple chunks. Really, can it get more exciting? Perhaps, maybe at a four star restaurant. Okay, definitely at a fine four star restaurant. But I can pretty much count on my circus act cleaning out the refrigerator to make room for…
MORE LEFTOVERS!
But tonight we had a surprise guest. An old friend of ours happened to be in the area on business and stopped by to say hello. The last time we saw him our little girls were into Barbie and the Cheetah Girls. Now they are driving, preparing for proms and perfecting their adolescent sighs and eye rolls. Our sons were still in diapers and just getting the walking thing down. Fast forward a few years later and Josh has another son and we are will soon become grandparents.
Time flies. In years and in hours because while we caught up it soon became dinnertime. Bill asks what’s for dinner and I am a little embarrassed to say I was planning on leftovers. Before I can offer a quick, easy, fantastic alternative Josh expresses leftovers sounds great. So leftovers it was complete with a whiny six year old, some teen-aged angst and drama with an eye roll or two thrown in for good measure.
Josh thanked me for a great home-cooked meal. Okay so some of it was actually re-heated in a microwave. He still thought it was a great meal and no, he assures me it isn’t the Heinekin he had with dinner talking.
I’m thinking he is missing his family a lot. Hopefully he will be home soon to enjoy leftovers with them.

Ohhh ho I can tell you this…leftovers are the most underrated of meals! I LOVE when people say they are dishing them out, like an unofficial smorgasbord!
I’ll bet it wasn’t the Heineken talking.

Hubby takes care of all the leftovers around here where they are called “lunch.” He takes them to work. I NEVER touch them, so it works out just fine.
